Nan-Made Recipe: Salad Dressing


I’ve consistently had four cups of organic spinach with kidney beans and pumpkin seeds for lunch every day since we left Kripalu. I’ve recently added in organic carrots for the soluble fiber (thanks to Dr. John). I make my own salad dressing and I’m sharing that recipe with you:
a tablespoon of turmeric, extra virgin olive oil (a few tablespoons), juice of one fresh lemon, a few drops of balsamic vinegar.
The dressing is a
great topper for the spinach salad. If you’re trying to fit in more garlic, this is a great place to add it. Finely chopped fresh organic garlic can be added. And this dressing rivals any store bought dressing by far!

    Wow, that looks and sounds wonderful. I can almost smell the turmeric and garlic. Must try.

    I’ve been eating from my garden – cukes and tomatoes. They are so sweet and juicy. The eggplants are getting bigger, some are almost ready to pick, thanks to the rain. I’m trying to make room for pumpkins next year. . . I’m eyeing a volunteer blue spruce that’s right next to the existing garden. I need pumpkins more than I need a blue spruce.
