Big Test Day

Today, being a rainy Monday in Boston, is a big “test” day for me. Rushing to work is a challenge as is lunch. Usually, I dine on a high sugar yogurt and large coffee from my neighborhood McDonald’s (breakfast) and a super high sodium and high fat/low health value meal at The Cheesecake Factory or P.F. Changs.

Last night, I planned accordingly. I snacked on organic celery and no salt, organic peanut butter (Whole Foods freshly ground) on my way into work and drank 16 oz. of water.

Lunch is (also prepared last night) raw walnuts, watermelon (conventionally grown) grapes, blueberries (both organic), and an organic avocado.

I also brought one square of 80% dark chocolate with me for a snack.

Here goes nothing!!!

    Good luck. Just think about where we all were last Monday. Such a journey. I’ve cleaned my pantry – not totally. Now I’m bringing up my simple white dishes, I want to experience this in Technicolor.

    • It is pretty amazing to think that only a week ago, we were figuring this all out together. I’m happy to say that I made it through the first day back to work and have already planned and packed tomorrow’s lunch. Whew! I love the technicolor idea as well. That’s smart!!

    Congrats on prepping ahead of time! I really do think it is key. I’m going on a hour walk shortly and then eating breakfast – not sure yet what that will be, but I DO know it will be from our healthy choices list. Best wishes ya’ll!

    • That’s awesome. I am PROMISING myself that I will go for a short walk tomorrow night when I get home from work. Can’t have one without the other!
