Nan-Made Recipe: Two Beans Walk into a Quinoa

Knowing that I would have to make this fun in order for this new lifestyle to work, I decided to start creating recipes based on the info that I learned at Kripalu and ensuring that my meals were
tasty.

Tonight, I made a Quinoa Bean Salad that would be great to take to work.

1 can Trader Joe’s Organic Garbanzo Beans

1 can Trader Joe’s Organic Kidney Beans

1 cup Trader Joe’s Organic Quinoa

2 cloves of garlic

Extra Virgin Olive Oil

Balsamic Vinegar

Fresh Cilantro

One tomato

One small white onion

 

 

Boil up the quinoa; one cup quinoa to 1.5 cups of boiling water.

Rinse the garbanzo and kidney beans.  Rinse again!

Dice the two cloves of garlic and five stalks of cilantro.  Dice the tomato and onion.

Place kidney beans, garbanzo beans, garlic, cilantro, onion, and tomato into a bowl.

Cool and rinse the quinoa; let sit.

Drizzle olive oil (approx. 3 tablespoons) over the bean salad.  Let sit for 30 minutes to absorb flavor.

Add in quinoa.  Mix with a wooden spoon.

Add in three tablespoons of balsamic vinegar (to taste/preference).

Mix and CHILL.  It’s super important to chill because this is a cold salad!

Great to leave in the fridge and bring to work.  (Don’t forget a mint!)

    I think TJ’s is going to benefit as well.

    I made a stir-fry of:
    Yam
    Zucchini
    Onions
    Garlic
    Red Pepper Flakes
    Curry

    I noticed that when I cook at a lower temp and don’t use the blowtorch method my pots are easier to clean. An added bennie.
